This winter, Aspen welcomed three exciting new restaurants, each offering a unique culinary experience—from French-Indonesian and Mediterranean to French-American flavors.
WAYAN ASPEN
Wayan’s lamb chops offer the perfect hearty indulgence
Following the success of their Wayan pop-up at The Little Nell, culinary power duo Cédric and Ochi Vongerichten—known for their acclaimed New York City restaurants Wayan and Ma•dé—launched Wayan Aspen in December 2024. Partnering with restaurateur Ezra J. William and Raphael Derly, they introduce their signature French-Indonesian cuisine to the Rockies. Cédric’s French culinary pedigree (as the son of chef Jean-Georges Vongerichten) and Ochi’s rich Indonesian heritage create a blend of tradition, innovation and heartfelt hospitality. HASALON
This winter, W Aspen unveiled a stunning Aspen location of HaSalon, the Mediterranean restaurant by celebrated chef Eyal Shani, alongside a new bar and lounge concept crafted by renowned mixologist Dushan Zarić of New York’s iconic Employees Only. Through April 2025, HaSalon offers an unforgettable culinary journey, showcasing Shani’s creative take on Mediterranean cuisine while honoring the spirit and flavors of HaSalon’s Tel Aviv roots. From après-ski through 8 p.m., guests can indulge in dishes like charred beetroot carpaccio, baby potatoes with Osetra caviar, bluefin tuna, ribeye steak, and signature ricotta cloud pasta, all within an intimate, music-filled ambiance. ZIGZAG ASPEN
ZigZag’s steak is the epitome of Aspen luxury, a truly indulgent culinary experience.
This winter, the iconic Mezzaluna space is reimagined as a modern French-American bistro, ZigZag Aspen. Conceived by co-owner and operator Romain Pavee, the restaurant seamlessly blends his nearly two decades of luxury hospitality expertise—honed in France, New York, and Las Vegas—with the local passion and knowledge of longtime Aspen residents Scott and Carly Weber. ZigZag is home to Aspen’s last traditional wood-burning oven, where dishes like garlic confit bread and Pomodoro pizza come to life, bubbling over the fire.
