1. For The Little Nell’s Chris Dunaway, the choice is easy: 1990 Château Lynch-Bages. “Around 30 years old,” he says, “this is where I think pedigreed Pauillac is at its peak from a great vintage. Winter in Aspen matches this sentiment.” 675 E. Durant Ave., thelittlenell.com

3. Steve Humble of Free Range Kitchen & Wine Bar in Basalt, meanwhile, has his mind on the 2015 Domaine Vincent Paris Granit 60 from Cornas in France’s Rhone Valley. Caribou Club’s Oliver Jaderko brings it back to the States with Realm’s The Bard 2016. “This Napa wine,” he explains, “hits on all cylinders; it’s perfumed, layered and complex, ending with a note of licorice.
