Colorado Peach and Cream Crepe

Perhaps Colorado’s most notable farm-to-table scene stealer, the Palisade peach is a summer harvest beauty adored far and wide. Seasonal recipes and dish twists are developed in anticipation of the first ripe boxes arriving in August. Celebrating its inaugural summer in Snowmass Base Village, The Crêpe Shack is poised with a simple yet decadent dessert starring the stone fruit.

Mawa McQueen—of celebrated Mawa’s Kitchen—crafts a special late-summer Colorado peach and cream crepe using grilled Palisade peaches she sources from a farm stand in El Jebel. The thin pancake-esque wrapping is filled with a whipped cheesecake cream, made with cream cheese, vanilla bean extract and powdered sugar. A homemade salted caramel sauce and almond slivers crown the handheld delight.
