Mawa McQueen—of celebrated Mawa’s Kitchen—crafts a special late-summer Colorado peach and cream crepe using grilled Palisade peaches she sources from a farm stand in El Jebel. The thin pancake-esque wrapping is filled with a whipped cheesecake cream, made with cream cheese, vanilla bean extract and powdered sugar. A homemade salted caramel sauce and almond slivers crown the handheld delight.
