Health food lovers flock to the new Tuesday Foods headquarters in Carbondale.
Have you ever admired images of plant-based food—crudites in every color of the rainbow, nourishing-looking soups, colorful salads, interesting veggie burgers and grain bowls, raw treats and nutrient-packed smoothies— and thought, “If someone prepared this for me, I would eat it and probably look and feel great”? Truth is, it’s a lot easier to eat your kids’ leftover pasta than chop 10 ingredients for a superfood salad. That’s where Tuesday Foods’ vegan meal delivery service comes in.
Founded in 2019 as “Good Clean Food” by certified health coach and vegan chef Kelly Hollins and certified nutritionist and exercise physiologist Lisa Cohen, Tuesday Foods has evolved from a local passion project started in their home kitchens in Basalt to a 15-employee operation with commercial kitchens in Carbondale and Boulder to serve the Front Range and the entire Roaring Fork Valley. The new Carbondale headquarters boasts a sparkling, light-filled commercial kitchen that’s available for event rentals and cooking classes. The space might even facilitate a weekly to-go program—think juices, smoothies, soups and other menu items sold a la carte.

In late 2022, Tuesday Foods acquired beloved Carbondale juice bar Tonic Juicery. With its new industrial-grade hydraulic cold press, Tuesday Foods offers its own cold-pressed organic juice. Customers can add juice to their Tuesday Foods meal delivery or order stand-alone two-, three- and five-day juice cleanses on the first Tuesday of each month.
“There are so many benefits to drinking fresh, cold-pressed juice,” says Cohen. “On a cellular level, it supercharges our intake of vitamins, minerals and antioxidants, all of which our bodies need to feel healthy, vibrant and energized. Juices flood your body with nutrients and hydration that are easily absorbed in your digestive system. In fact, we’ve noticed that when we consistently drink freshly juiced green veggies, we have more energy, our skin is bright and clear, and we just feel better all around!”

But the gluten-free bread and vegan butter of Tuesday Foods’ business is its weekly plant-based meal delivery. Each week, chefs create a nutritionist-approved menu packed with the highest-quality ingredients, using organic produce whenever possible. Customers can peruse the menu, which includes a salad, soup, two entrees, a bowl, crudites and dips, healthy treats, a chia pudding and smoothie kits, before ordering (signature meal plans, lighter menu options, cleanses, special offers, etc.). On Tuesday, fresh, ready-to-eat meals arrive on your doorstep in reusable glass and compostable packaging. The following week, Tuesday Foods picks up the empty containers.
