S'mores aren't so simple anymore with Velvet Buck's dizzying number of sweet and savory combinations.

When French chef Laurent Pillard took over operations at Velvet Buck in June, he made innovation and fun de rigueur. So, a s’more became a lot more. Offered for both sweet and savory palates, the two menus make the DIY dessert a Choose Your Own Adventure treat. On the sweet side, select a base cracker or cookie; add a fruit, a spread, homemade marshmallows and chocolate (or bacon); and roast creations like a ginger snap-strawberry-raspberry marshmallow with Valrhona chocolate over the open flame. Is that too pedestrian? Opt for the savory menu, and try combos of crackers, veggies, protein and cheese to make gooey tapas—a personalized variation of European raclette.
