Mushrooms on mushrooms are the meat of The St. Regis Aspen Resort’s Four Sigmatic menu.
Mushrooms may be the oldest new trend in food. Their wellness properties have been acknowledged for thousands of years in many cultures, but, recently, fungi are popping into the light again. “We tapped Four Sigmatic for the menu, as they have an assortment of mushroom and adaptogen-based products providing a range of benefits, including digestive support, stress reduction and healthy skin support,” says executive chef Laurent Pillard for TheSt. Regis Aspen Resort. “Just as important, these ingredients are extremely versatile for culinary use, and actually elevate the flavor and presentation of each dish.” Four Sigmatic is a line of mushroom- and herb-based blends that sit at the top of the superfood chain. For Pillard’s menu, ravioli are accented with a ramp, shimeji and chaga mushroom consomme; and an Alaskan halibut is topped with a fiddlehead fern and golden latte broth.
