Oh, what a fabulous time to dine in Aspen! In December, diners were introduced to one of the world’s best restaurants when Manhattan’s posh Eleven Madison Park launched Winter House Aspen by American Express, sister to a popular summertime pop-up in the Hamptons. Owners Will Guidara and chef Daniel Humm, the duo that has led the group to collect multiple Michelin stars and James Beard awards, swooped into Chefs Club at The St. Regis Aspen Resort and transformed it into a woodland scene fit for a snow king and queen: panels refinished in rich hazelnut-colored wood, which extend about halfway up the walls; crisp white tablecloths; mood lighting; and cushy seating.

It’s a warm, elegant space in which to sample Humm’s refined Alpine fare—cuisine he grew up eating in his native Switzerland, such as Zurich-style chicken with mushroom cream, veal schnitzel, spaetzle, and ubercrispy potato rösti—as well as an array of luxe seafood such as oysters, a lobster wedge salad, trout toast, and endless caviar, natch.
