Model Kate Bock adds a welcome wellness spin to this season’s sip with her hard sparkling water, Pompette, available at Aspen’s Snow Lodge. We polled the stunner for her entertaining tips and tricks.
What first sparked your interest in your wellness? I first became interested in wellness at a young age. I grew up in West Vancouver and modeling wasn’t even on my radar. I was tall, thin, had braces and I was really into sports. I played baseball, soccer, field hockey and I loved to swim. My mom always bought organic food for our house. She didn’t feed us anything processed. Staying active and keeping healthy came from my upbringing, and I’m very grateful for that!
How do you think Pompette fills a void in the market? Pompette is a healthier alternative to beers, wines and heavy caloric cocktails currently in the marketplace. It is gluten-free, made with natural ingredients, cold and refreshing, and it quenches your thirst. It also comes in a chic resealable, 750 ml glass bottle unlike others in its category.
How do you like to serve, enjoy or pair it? When I’m home, I love to cook and meal prep with fresh ingredients. One of my favorite and most simple dinners is miso-glazed salmon and Brussels sprouts in the air fryer that are perfect to a crisp. I like to enjoy it all with a delicious salad that has fake mozzarella cheese (since I am dairy-free), avocado, basil, salt and pepper, tomatoes, olive oil and balsamic. When I want to indulge a bit, I love pizza and flatbread. I am lucky that there are quite a few brands in the marketplace that feed my pizza cravings. Pompette goes nicely with both my homemade fresh dinners or any sort of pizza—pour over the rocks, and we encourage those who want hard alcohol to add their favorite or order by the drink that way. Some really nice combinations I’ve tried include gin with our cucumber-lime [flavor], vodka with the delicious clementine-berry, and a nice blanco tequila pairs with lemon-mint or add a splash of elder flower liqueur to our roséhibiscus. Add a garnish and you have a perfect cocktail.
What do you like to serve with Pompette when entertaining? We just launched the new Pompette flavor grapefruit-bergamot, which pairs so great with a well-put-together charcuterie plate. I love all the varying textures and flavors pulled together, and there can be so many different combinations! First I start with a variety of cured meats. I love sweet soppressata, prosciutto, pepperoni, salami and a variety of other cured meats. Next I use a variety of soft and hard cheeses such as brie, havarti, Gouda, hot pepper, blue cheese, sharp cheddar and vegan options—the choices are endless! From there I will add olives: Greek, stuffed green olives with blue cheese or almonds and black olives. I add some spreads like fig, olive tapenade, different honeys and some dried fruit such as dates and figs. To top it off, I will add a variety of nuts: almonds, pistachios and hazelnuts. Serve this with a variety of crackers, focaccia toast and bruschetta, and you have a beautiful charcuterie board. Oh, and don’t forget to decorate your board with fresh berries or herbs like a sprig of rosemary.

Grapefruit Bergamot Pompette Moscow Mule
Ice
6 oz. of Pompette Grapefruit
Bergamot
1 oz. of vodka
1 oz. of fresh lime juice
3 oz. of ginger beer
Fresh grapefruit
Rosemary
Fill glass halfway with ice. Pour 6 oz. of Pompette Grapefruit Bergamot. Add 1 oz. of vodka. Add 1 oz. of fresh lime juice. Top it off with 3 oz. of ginger beer. Add a squeeze of fresh grapefruit. Stir. Garnish your glass with a slice of grapefruit and sprig of rosemary.

Ice
6 oz. of Pompette Grapefruit
Bergamot
1 oz. of tequila
1 oz. of fresh grapefruit juice
1 cinnamon stick
Fill glass halfway with ice. Pour 6 oz. of Pompette Grapefruit Bergamot. Add 1 oz. of tequila. Add 1 oz. of fresh grapefruit juice. Garnish your glass with a slice of grapefruit and cinnamon stick.
