Chef Barclay Dodge established Bosq, a Michelin-starred restaurant in Aspen, to offer guests an intimate dining experience. Chef Dodge is passionate about celebrating Aspen Valley's agricultural traditions by honing in on essential flavors and thoughtfully combining textures and ingredients. The restaurant offers two immersive tasting menus—one five courses and one 10—for guests seeking this one-of-a-kind cozy dining adventure grounded in the valley's bounty.
Led by owner and renowned chef Mawa McQueen, the kitchen at Mawa’s Kitchen is a hub of creativity and passion. Chef Mawa, a leading figure in Colorado’s culinary scene, has built a strong reputation on her bold yet elegant takes on classic dishes. After finding success with her flagship Aspen restaurant Mawa's Kitchen, a favorite gathering place for visitors and locals alike, the ambitious chef recently expanded to open The Crepe Shack in the new Snowmass resort development. Mawa draws inspiration from her diverse cultural background as well as her philosophy of using fresh, high-quality local ingredients to craft dishes that both satisfy and surprise.
Cooking up culinary genius in the kitchens of Cache Cache and Home Team BBQ, chef Chris Lanter exemplifies dedication to mastering new techniques and ingredients. After getting his start at Cache Cache and later becoming executive chef, Lanter took on a new challenge, exploring the world of barbecue as Home Team BBQ's head chef and pitmaster.
Born and raised in Denver, Colorado, Preston Hix began his culinary career at 14, working at a local Italian bistro under chef Samir Mohammad. His journey led him to Vail as sous chef at La Tour, then to Miami, where he worked at the Fontainebleau Hotel & Resort, La Gorce Country Club, and later led Klaw Restaurant as Chef de Cuisine. After refining his skills across various cities, Hix returned to Colorado to elevate the dining experience at Le Bilboquet in Denver and later became Executive Chef at The Snow Lodge in Aspen. Outside of work, he enjoys spending time with his family, girlfriend, and his passion for motorcycles and vehicles.
Flavor architect Berto Paglia brings la dolce vita to the Roaring Fork Valley, serving as executive chef of Acquolina. Mastering the flavors of pizzas, chicken and eggplant parmesan and mouthwatering pasta dishes (think cacio & pepe and linguine with clams), chef Paglia is undoubtedly a culinary innovator.
Mark's career has taken diverse turns from a small-town Nevadan kid to an experienced international traveler with prestigious training under some legendary chefs. Now, he looks to make his mark at the exclusive and discerning PARC in Aspen. Mark arrives with passion and credentials that intrigue the Aspen culinary scene.
