The Young Professionals Network, a subcommittee of the Aspen Board of Realtors, recently published The Aspen Cookbook. Proceeds support the local restaurant industry, which has been hit particularly hard by the pandemic. The book’s editor, Amanda Rae Busch, and a team of volunteer tasters indulged in the culinary talents of hundreds of chefs, farmers and artisans to piece together this salute to local food. Recipes include starters (artichoke bruschetta from Ellina), vegetarian dishes (tikka masala curry from Aspen Public House) and entrees (whole fried Colorado striped bass from Toro Kitchen & Lounge).
